Blood pancakes are traditional Sami food. During slaughter, the whole animal was utilised, including the blood. Here is Svein Leiros' recipe for blood pancakes the Sea Sami way.
From ancient times, the entire animal was used after slaughter, including the blood. For example, it was common to eat blood sausages, black pudding, and blood pancakes.
Ingredients
½ litre of blood, in coastal Sámi areas, sheep and cattle were commonly used
3 eggs
6 dl milk
A little pepper
Salt 1 tsp allspice
1 tsp nutmeg
Wheat flour
How to
Whisk the eggs with the blood. Stir in the milk and seasoning. Stir in the flour until you have a suitably thick batter free of lumps. Fry like a normal pancake.
Svein says that in Ivgu suohkan/Lyngen municipality, where he grew up, it was common to serve the pancakes with blueberry jam and sugar.
