This is a recipe for the traditional Sámi dish bidos from the Centre for Northern Peoples' Sea Sámi Kitchen.
(approx. 4 portions)
1 litre of venison stock
250 grams of potatoes
200 grams of carrot
100 grams of onion
Leek if desired
400 grams of reindeer meat
Salt and coarsely ground pepper
4 tablespoons wheat flour for levelling
Bring the stock to the boil, add the meat, cook for about 15 minutes. Add the diced vegetables. Make a mixture of wheat flour and water and add it to the boiling soup, a little at a time to the right thickness.
Serve with gahkku.
