Plastic hadn't been invented yet, so we had what they called an 'eighth barrel'. They were made of wood. We boiled the berries without sugar and stored them in these barrels. The barrels were kept in the outhouse, and we took jam from there. We didn't have enough sugar to sweeten a whole barrel, so we added sugar as needed. It was jam for the whole year. The berries kept. We never discovered mould or fermentation.<\/p>\n\n\n\n
<img decoding=\"async\" width=\"600\" height=\"401\" src=\"https:\/\/nordligefolk.no\/wp-content\/uploads\/2025\/10\/tyttebarG.jpg\" alt=\"\" class=\"wp-image-994\" srcset=\"https:\/\/nordligefolk.no\/wp-content\/uploads\/2025\/10\/tyttebarG.jpg 600w, https:\/\/nordligefolk.no\/wp-content\/uploads\/2025\/10\/tyttebarG-300x201.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>
Platter with cranberries. The egg whites and sugar are whipped stiff. Then you add the berries, and then you just whip further until it turns a nice pink colour. That is trollkrem (troll cream). Now you can make trollkrem all year round. We used to have trollkrem when the lingonberries were ripe in the autumn. We got the eggs for the trollkrem from our own hens. I think about those hens: they were so beautiful, they were speckled with all colours. I don't think I saw white hens until after the war. We called the white hens \"Italians\".<\/p>\n\n\n\n
<img decoding=\"async\" width=\"600\" height=\"401\" src=\"https:\/\/nordligefolk.no\/wp-content\/uploads\/2026\/02\/trollkremG.jpg\" alt=\"Trollkrem\" class=\"wp-image-1792\" srcset=\"https:\/\/nordligefolk.no\/wp-content\/uploads\/2026\/02\/trollkremG.jpg 600w, https:\/\/nordligefolk.no\/wp-content\/uploads\/2026\/02\/trollkremG-300x201.jpg 300w, https:\/\/nordligefolk.no\/wp-content\/uploads\/2026\/02\/trollkremG-18x12.jpg 18w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>
Troll cream.
